Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs or vanilla wafer crumbs
  • 5 tbsp unsalted butter melted
  • 1 pinch salt
Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring or beet juice concentrate
  • 1 cup heavy whipping cream whipped
  • Mini chocolate chips or red velvet cake crumbs for garnish, optional
  • Fresh raspberries or white chocolate ganache optional

Method
 

  1. Mix graham cracker crumbs, melted butter, and salt in a bowl. Press into the base of a lined tray.
  2. In another bowl, beat the cream cheese and powdered sugar until smooth. Add vanilla extract and food coloring or beet juice.
  3. Gently fold in the whipped cream until well combined.
  4. Spread the filling over the crust and smooth the top. Chill in the refrigerator for at least 2 hours.
  5. Cut into bite-sized pieces and garnish with mini chocolate chips, cake crumbs, raspberries, or white chocolate ganache as desired.
